| In Japanese cooking, use of seasonings to add flavor to a dish is kept to a minimum; food is cooked in such a way as to bring out the original flavor of the ingredients. This being the case, the quality of the ingredients that are locally available makes a big difference to the flavor of local dishes. In this regard, Yamashiro Hot Spring is no exception. Because it is located in Hokuriku, one of the places in Japan with the best ingredients, abundant fresh seafood from the Japan Sea, such as crab, deep-water shrimp and yellowtail, and vegetables and fruit grown with good-quality water and fertile soil can be enjoyed daily. |

Hot-spring Eggs |
| With its high-quality water and fertile soil,Kaga/Yamashiro is also a fruit-growing area. In recent years, improvements to varieties have been carried out in earnest, and pears and grapes are particularly delicious. |
These eggs have a faint, characteristic flavor imparted by the smell of sulfur, one of the components of thermal water.
They keep well at room temperature, and are known as a souvenir of Yamashiro Hot Spring that anybody would be pleased to receive. |
